I went to the University of Melbourne, and I liked the experience well enough. Back when vet sci was still an undergrad course at unimelb, you spent three years up to your eyeballs in theory (the last of which was the worst, with twelve exams in the space of three weeks and an assessment every week of second semester), and the last two years a mix between theory and practice, but mostly practice. These days it’s a postgrad course following another science degree, and the final year is purely practical.
Different people flourish under different situations. Personally I found the academic side of vet sci easier and altogether less emotionally draining than the practical side, whereas a lot of my friends were the opposite - failing multiple exams in theory years but becoming insanely competent, composed, hands-on young vets during clinical years.
No matter which school you go to, keep in mind that school will never teach you enough about the working situation. Not even being on clinical rotations will. So try, if you can, to get a part-time job in the industry, which will also give you invaluable experience for the heinous job market post-graduation.
Lastly, a piece of advice that was never stressed enough at school: the majority of people think being a vet is about loving animals, and most people pursue a veterinary career because they care about animals. But be aware that, to be a good vet, you have to love people just as much. The amount of time you spend being a counselor and friend to your clients can almost exceed the amount of time you spend treating their animals. Empathy and sympathy, again, aren’t things veterinary schools teach or emphasise adequately, even when vets need as much ‘bedside manner’ as human doctors. So please, when considering a veterinary degree, don’t neglect the sheer amount of people skills you’ll need to get the job done right.
